Ajoutez le riz et l\u2019\u00e9chalote puis faites-les revenir 1 ou 2 mn jusqu\u2019\u00e0 ce que le riz soit translucide. Versez 40 cl d\u2019eau, salez et couvrez. Laissez cuire 15 \u00e0 20 mn en remuant r\u00e9guli\u00e8rement : la texture doit \u00eatre onctueuse.<br \/>\nMettez les f\u00e8ves, les fleurettes de brocoli et la courgette dans une casserole. Mouillez d'eau \u00e0 mi-hauteur et laissez fondre pendant 7 ou 8 mn sur feu doux. Egouttez les l\u00e9gumes en r\u00e9servant un peu d'eau de cuisson, puis remettez-les dans la casserole et faites-les revenir 2 ou 3 mn avec 1 c. \u00e0 caf\u00e9 d\u2019huile d\u2019olive, l\u2019ail et l\u2019estragon.<br \/>\nIncorporez sur feu doux le parmesan dans le riz cuit.
