Mettez-les \u00e0 cuire \u00e0 la vapeur pendant 20 \u00e0 30 min. selon leur grosseur. Hachez le jambon de Parme. Lavez, essorez, ciselez la ciboulette. Laissez ti\u00e9dir les pommes de terre. Coupez leur chapeau sur 1 cm d'\u00e9paisseur dans le sens de la longueur. Creusez-le en laissant 1 cm de chair tout autour. Allumez le four \u00e0 150\u00b0 (th. 5). Ecrasez \u00e0 la fourchette la pulpe r\u00e9cup\u00e9r\u00e9e, m\u00e9langez-la au mascarpone, au jambon et \u00e0 la ciboulette. Poivrez, mettez de la muscade. Farcissez chaque pomme de terre de cette pr\u00e9paration.
